Key Responsibilities
As the Hygiene Officer, you will be responsible for developing, implementing, and maintaining a comprehensive hygiene and sanitation program, ensuring compliance with both Kenyan public health standards and international protocols.
Hygiene Program Design and Implementation:
- Develop and maintain comprehensive hygiene and sanitation Standard Operating Procedures (SOPs)
- Ensure cleanliness protocols are in place across all hotel departments, particularly within culinary and F&B outlets
- Create pre-opening hygiene documentation if applicable for new outlets or facilities
Audits, Compliance & Risk Management:
- Conduct regular hygiene inspections, audits, and risk assessments for food production areas, guest outlets, and public spaces
- Monitor hygiene indicators and track compliance using digital tools or checklists
- Ensure food safety compliance in accordance with Kenya public health law, HACCP, and international standards
- Serve as the lead contact for inspections from local health authorities and regulatory bodies
- Provide timely updates and reports to senior hotel management
Training & Awareness:
- Lead hotel-wide hygiene training programs for kitchen, housekeeping, and food & beverage staff
- Conduct refresher trainings and maintain training logs
- Instill a culture of hygiene excellence through ongoing engagement and best-practice sharing
- Work closely with HR and Learning & Development to onboard new employees with hygiene responsibilities
Collaboration with Departments:
- Liaise with Executive Chef, Engineering, Stewarding, Housekeeping, and F&B teams to ensure proper hygiene practices
- Participate in interdepartmental meetings to monitor food handling and storage practices
- Recommend changes to layout, operations, or workflows that will enhance hygiene standards
Monitoring & Continuous Improvement:
- Set up and manage a Hygiene Monitoring Program that includes inspections, data collection, and analysis
- Use trend analysis to identify potential problem areas and preempt risks
- Introduce improvement projects and report effectiveness post-implementation
- Maintain meticulous records of hygiene performance and inspections
Qualifications
- Minimum of 2 years’ experience in a hygiene-related role within a luxury hotel environment
- Hands-on knowledge of HACCP, FSMS (Food Safety Management Systems), and international food safety certifications
- Diploma or Bachelor’s degree in Hotel Management, Food Safety, Public Health, or related fields preferred
- Strong understanding of Kenya public health standards and global hospitality hygiene best practices
- Prior experience with pre-opening hygiene setup or operational redesign is highly desirable
Technical Skills
- Proficient in conducting inspections, audits, and reporting using digital tools
- Ability to create hygiene SOPs, checklists, and audit schedules
- Skilled at preparing compliance documentation for local authority reviews
- Ability to manage critical hygiene incidents and implement corrective actions
- Capable of maintaining data on hygiene performance and generating regular summaries
